Gotta love a sweet potato

If you try to eat local and/or seasonally you’re probably pretty bored of what’s available in the freezing cold months (If you live in that climate.) I do and I’m really looking forward to spring veggies and greens.
But for now, I’m all over sweet potatoes. not only do they have loads of flavor, they’ve got tons of Vitamin A, (1 cup has 769% of the USRDA of Vitamin A, amazing, huh?) a good amount of Vitamin C, fiber, Vitamins B6, Potassium, Manganese and Pantothenic Acid. Not too high in sugar either, but perfect for killing those gotta-have-something-sweet cravings. Really filling too, A medium sized baked sweet potato is the perfect lunch for me, it fills me up, doesn’t knock me out and keeps me going until dinner.
I like ‘em baked. Slit the top, toss onto the center rack in a preheated oven set for 400 degrees F for about and hour, until they’re really soft and dripping juice. I add some cooked peas, a pat of butter, a sprinkle of Celtic Sea salt and sometimes a spoonful of cottage cheese, sounds a little funky, but it’s totally delicious.
Make sweet potatoes your friend, your skin will thank you.
