The green bell pepper: bastard of the veggie patch

There are some really gorgeous sweet peppers at the market these days, they look like giant jewels just asking to be taken home and eaten.

Green bell peppers don’t get the credit they deserve since the sexy other colored ones have appeared, but they tend to be cheaper and super good for you. When I was a kid they had a bad rap. I don’t know why, but only the “weird kids” had them in their lunch. Turns out he weird kids were onto something.

We’re looking at a fantastic low calorie veggie, a whole medium sized one (about 2 3/4″ with a diameter of 2 1/2″) has only about 25 calories! Hell, you can burn that just by existing. Green peppers are full of vitamin C, in fact one the size above will bring you 159% of the USRDA daily requirement. There’s also some vitamin K, vitamin A, thiamin, niacin, folate, magnesium and copper.

They like to say green peppers are a wonderful source of fiber but I disagree. There’s some, but not enough to get excited about.

Green peppers are wonderful in salads or as a snack on their own, that tang really satisfies if you’re having a sugar craving. If you’re not familiar with bell peppers know not to eat the stem, seeds or the white pithy stuff inside, those are not good.

Go liberate a pepper next time you’re at the market, the green ones need love too.
