Recipe: Kathy’s killer tomato sauce

Being able to whip up a good homemade sauce is great for two reasons: It’s totally impressive and it’s easy on the wallet.
My friend Kathy called me last night to share this super easy recipe for tomato sauce, she’s obsessed with it. Must be because it’s tomato season so lots of gorgeous Romans are available.
- 6-8 ripe Roman tomatoes
- Olive oil
- 4-6 Cloves of raw garlic
- Chop up tomatoes and garlic and toss in a pan with a little olive oil, just enough to coat the bottom.
- Let simmer on low until it thickens, around 45-50 minutes, stir once in a while if you like.
- You can eat it like this or add to it.
- Season to taste.
Kathy’s last sauce was this as a base with some chopped raw mushrooms added about halfway through cooking. She also threw in a bunch of shelled raw shrimp 5 minutes after the mushrooms and let it all cook to appropriate thickness.
I can’t wait to try it out with just some sea salt and fresh basil, this is perfect for the end of the summer.
