Recipe: Roasted Sunchokes

Jerusalem artichokes (or sunchokes) are everywhere these days. I haven’t had much luck in preparing them in the past, but I found a recipe to share.

Sunchokes are a from the sunflower family and are a great source of iron, thiamin and potassium. There’s also some fiber, vitamin C, niacin and copper. Basically, they’re a carbohydrate, but we need carbs to make our brains work so don’t sweat it.

I got the recipe from the website The Kitchn dot com, it’s really quick and easy. Instead of peeling them I scrubbed them really well under water and then rubbed them pretty roughly using a clean dish towel to get off a little of the skin. I cut them a little thinner than suggested and completely spaced on the rosemary. No matter, they were really good and considering how easy they were, I’ll be doing this again.

I hope you enjoy them as much as we did, I’m looking forward to the next batch with rosemary.
